Our method of hand-selecting cattle for processing can be described in a 5 step process.
This entire process from the time the calf is born, to the time you receive your beef, is within 30 months. This streamlined process ensures that you get the freshest and most superior tasting beef for the lowest price in the market.

Our method of hand-selecting cattle for processing can be described in a 5 step process.
- Calfs are born and weigh about 60 – 80 pounds. Over the next couple of months they live off their mother’s milk before switching to a grass-fed diet.
- Our experienced representatives in the U.S then hand-pick the most promising cattle for further processing.
- Since marbling is the critical factor for beef flavor, we deliberately choose cattle that are grain-finished. The grain adds essential vitamins and minerals which enhances the tenderness and flavor of the beef.
- Throughout the whole process, the USDA inspectors stationed in all our federally inspected packing plants oversee the implementation of safety, animal welfare and quality until the final beef products are shipped to us in Hong Kong.
- Then you choose your favorite cuts, we pack and deliver straight to your home.

How the USDA Grades Beef
The United States Department of Agriculture (USDA) meticulously grades beef at the request of a meat packer. Only beef that is USDA inspected may carry the USDA shield of authenticity. The grading system determines the quality rating of beef. The higher the ratio of marbling and the younger the beef, the higher the grade. It is the fat marbling that determines tenderness, juiciness and flavor. The age of the beef determines beef texture and also effects flavor. Younger beef produces a finer texture and a lighter red color.
USDA Choice Steaks.
USDA Choice is the second highest graded beef. Choice is a quality steak featured at many restaurants and upscale supermarkets. Generally USDA Choice will be much more tender, juicy and flavorful with a less coarse texture compared to Select. Good Chow carries USDA Top-Choice and Choice beef. USDA Select Steaks.
USDA Select is generally the lowest grade of steak you will find at a supermarket or restaurant. You will find it tougher, less juicy and less flavorful since it is leaner that Prime and Choice with very little marbling. The texture of Select is generally more coarse. Therefore, Select is not as enjoyable or desirable. |
